These hearty Cranberry Protein Cookies are made from wholesome ingredients with a punch of protein. Banana and dried cranberries add just the right amount of natural sugar without being overly sweet.

Today, I’m sharing another recipe from my brand new cookbook, The Everything Diet Macro Cookbook!

After reading Why We Get Sick, I am hyper-aware of what I’m eating and how it affects my insulin levels. I like to pay attention to glycemic load of foods, which is why I love these cookies so much.  They won’t spike your insulin (like a traditional sugary cookie) and leave you with a sugar high and then crash. Basically, they’re not some wussy cookie either. They’re loaded with oats, almond butter, and protein powder, so they are much more substantial and have some serious staying power!

Cookies don’t have to be a guilty treat. Make a batch and eat them on-the-go to the gym, for breakfast or as a quick snack in the afternoon – enjoy!

Ingredients in Cranberry Protein Cookies

  • banana

  • almond butter
  • unsweetened dried cranberries
  • ground cinnamon

Description

These hearty Cranberry Protein Cookies are made from wholesome ingredients with a punch of protein. Banana and dried cranberries add just the right amount of natural sugar without being overly sweet.


Ingredients

  • 1 medium banana, peeled and mashed
  • 1⁄4 cup vanilla protein powder
  • 1 cup rolled oats
  • 1 cup almond butter
  • 1⁄4 cup unsweetened dried cranberries
  • 1⁄2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In a medium bowl, mix banana and protein powder. Stir in oats, almond butter, dried cranberries, and cinnamon.
  3. Roll batter into eight balls and place them on the prepared baking sheet. Flatten balls slightly.
  4. Bake for 20 minutes or until lightly browned.
  5. Remove from oven, allow to cool slightly, and serve.
